Nungu Sarbath Recipe

Nungu Sarbath is a refreshing cool drink made by mixing nungu with nannari sarbath and served chilled. It is very quick to prepare and needs no cooking at all. The drink looks very appetising on the syrup color and has soft nungu pieces in every sip. It is mostly prepared during summer as this drink isa great thirst quencher.

Ingredients

  • 3 small sized palm fruit / nungu ½ cup mashed
  • 2 tablespoon nannari syrup
  • 1.5 cups chilled water
  • few ice cubes
  • 1 tablespoon lemon juice optional

Instructions

  • Take the palm fruit, peel off the outer skin. Now mash the nungu with a spoon.
  • Take your serving glass - Add nannari syrup first. Then add nungu.
  • Add lemon juice.
  • Add ice cubes and water. Mix well with a spoon and serve.
  • Serve Nungu Sarbath chilled!

Notes

  • Use fresh – I check if the nungu is soft and clear in color. Hard or old ones may not taste good and can be little chewy.
  • Mash lightly – Do not mash it into full paste. Small pieces gives nice texture while drinking and feels better in mouth.
  • Adjust syrup – Nannari syrup sweetness may varies by brand. I feel adding too much makes it overly sweet and heavy in taste.
  • Add lemon at last – You can add lemon juice at the end and mix well properly. It keeps the flavor fresh and not bitter.
  • Serve immediately – I prefer serving it just after mixing. If kept for long time, ice may melts and dilute the taste of the drink.
