Mango Coconut Milk Popsicle Recipe

Mango Coconut Milk Popsicles are refreshing frozen treat made with mangoes and coconut milk, and also the sweetness of mango with coconut milk add rich taste and fruity flavour. It is easy to make and the result comes really good, the bright yellow colour makes these popsicles look attractive.

Ingredients

*I used ½ cup thick coconut milk and ½ cup thin coconut milk

Instructions

  • Rinse the mango first then cut into cubes and collect it.
  • Collect the cut mangoes in a bowl. Take your popsicle mould. Add chopped mangoes to it.
  • Take coconut milk, add honey to it mix well and keep it ready.
  • Fill mango mixture till half if the popsicle mould. Now pour coconut milk mixture to the mould till the rim of the mould.
  • Using a long stick mix it.
  • Close with lid and freeze for at least 8 hours or overnight.
  • Then while serving time, show the mould under running tap water or dip it in a bowl containing water. Carefully pull out the popsicles.
  • Serve Mango Coconut Milk Popsicle immediately.

Notes

  • Mangoes – I usually use ripe sweet mangoes for best taste, If the mangoes are sour add little more honey.
  • Coconut Milk – Use thick coconut milk along with thin coconut milk for good texture. This gives a creamy popsicle after freezing.
  • Sweetness – I adjust honey to the sweetness of mangoes, because some mangoes are sweet enough.
  • Mixing – I just mix the mango and coconut milk inside the mould for marbled look after freezing.
  • Freezing – I make sure to freeze them overnight for best results. Longer freezing helps them set well.
  • Demoulding – Show the mould under running water for few seconds before removing.
