Lemon Poppy Seed Cookie Recipe

Lemon Poppy Seed Cookie is a crispy cookie made with wheat flour, poppy seeds and has mild sweet taste with tangy lemon flavour and it feels very refreshing to eat. These cookies have gentle lemon flavour and crunch from poppy seeds in each bite. It is also good to serve for guests or small get together at home.

Ingredients

  • 1 cup whole wheat flour
  • ¼ cup powdered sugar
  • 2 tablespoon poppy seeds
  • 2 teaspoon lemon juice
  • ½ teaspoon lemon zest
  • ½ teaspoon baking powder
  • 4 tablespoon oil
  • a pinch salt
  • ice water as needed

Instructions

  • Measure and add wheat flour to a mixing bowl. Add baking powder and salt.
  • Add black poppy seeds. Whisk it and set aside.
  • In another mixing bowl add oil, powdered sugar.
  • Add lemon juice. Whisk it.
  • Now add lemon zest. Mix it. Then add flour mixture.
  • Mix with your finger tips, now add chilled water little by little to form a dough.
  • Cling wrap and chill it for at least 30 minutes.
  • Roll out the dough to ¼inch thickness and cut out cookies using your favorite cookie cutter.
  • Meanwhile preheat oven at 180 deg C for 10 minutes.
  • Collect the extras again roll out. Repeat to finish.
  • Arrange in a baking tray with butter paper laid.
  • Bake in preheated oven at 180 deg C for 10-12 minutes or until the edges start to turn golden. Enjoy Lemon Poppy Seed Cookies!

Notes

  • Using lemon zest – I usually add fresh lemon zest for better flavour and smell. Do not add too much as it may turn little bitter in taste.
  • Dough consistency – I make sure dough is soft but not sticky while mixing. Add water little by little to control it properly.
  • Chilling dough – I keep dough in fridge before rolling and it helps in handling. This makes shaping more easy.
  • Rolling thickness – I roll dough evenly so cookies bake properly at same time. Too thin may make it too crisp and hard.
  • Baking time – I watch edges while baking and once it turns light golden I remove it. It helps to avoid over baking.
