Chocolate Cornflakes Recipe

Chocolate Cornflakes is a crunchy sweet made by mixing cornflakes with melted chocolate. This is one of those super quick desserts that you can make in just few minutes. It’s nice for tea time, for kids snack box or even to serve for guests. Looks a bit fancy but actually so simple to do. You don’t need any big cooking skill for this, just melt, mix and set.

Ingredients

  • 1 cup heaped plain cornflakes
  • cup heaped chocolate chips
  • 2 tablespoon honey
  • 1 tablespoon nuts and raisins chopped

Instructions

  • Take choco chips in a heat proof bowl. Using double boiler method (Take a pan with water, let it boil, place the bowl containing choco chips on top of it without the bowl touching the boiling water) melt the chocolate. It should be free flowing, melt till that consistency it may take few mins for it to melt completely.
  • Take honey and mix it with melted chocolate.
  • Crush cornflakes with your hands.
  • Add it to melted chocolate.
  • Add chopped nuts and raisins. Mix it well.
  • Scoop out with a deep curved spoon and carefully spoon it mini muffin liners.
  • I sprinkled edible silver sugar beads on top / Refrigerate it until serving time.
  • It may take at least 2 for it to set.
  • Cool down Chocolate Cornflakes and then store.

Notes

  • Cornflakes – I have used plain unsweetened cornflakes. If you are using sweetened ones, you should reduce honey a bit. Crush lightly with hands before mixing so it coats well but still keeps some crunch.
  • Chocolate Chips / Compound Chocolate – This is the main ingredient and this coats the cornflakes. I usually use semi-sweet for balance but you use milk chocolate if you like sweeter taste, or dark chocolate for rich flavor.
  • Honey – This gives light sweetness and also works like natural binder so the mixture holds shape.
  • Nuts & Raisins – I have used chopped cashews and little raisins. You can try almonds, walnuts or even pistachios if you have in hand. They give nice bite and little chewy feel in between.
  • Vanilla Essence (optional) – Just a tiny splash is enough for that rich bakery kind smell.
