Chana Pulao Recipe

Chana Pulao is a healthy and tasty pulao made by cooking basmati rice with chana, tempered spices, onion and herbs. Chana Pulao is a perfect choice of special rice at times when we run dry of vegetables and is simple & quick to make. Learn to make Chana Pulao with step by step pictures.

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • ½ cup chana black / white I have used black in this recipe
  • 1 small sized big onion chopped finely
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon chana masala powder / garam masala powder
  • ½ teaspoon coriander powder
  • 1 tablespoon ghee
  • 2 teaspoon coriander leaves chopped finely
  • salt to taste

To Temper :

  • 2 teaspoon oil
  • 1 teaspoon ghee
  • 2 ½ inch piece cinnamon
  • 2 cloves
  • 1 cardamom
  • 1 star anise

Instructions

  • Soak chana the previous night or at least for 8 hrs. Pressure cook chana for 5-6 whistles with salt and required water, Set aside. Soak rice in water for 30 minutes, Set aside. Heat oil+ghee in a pan - add the items listed under 'to temper' table.
  • Add onion, ginger garlic paste and sauté till golden brown ,then add chana masala powder and coriander powder. Now add cooked chana give a quick mix and let it cook for 2mins for the masalas to blend well.
  • Add soaked rice and 2 cups of water, required salt. Keep covered and cook till the rice is done.
  • Once rice is cooked - add ghee, fluff it up, garnish with coriander leaves. Finally garnish with coriander leaves. Switch off.
  • Serve hot / warm!

Notes

  • You can even add mint leaves for extra flavor.
  • You can make in pressure cooker too giving 3 whistles in low medium flame. Water is 1.5 cups if you have pre-soaked the rice for 30mins.
  • You can even use white chana instead of black chana.
  • You can even add ½ cup coconut milk and add 1 and ½ cups water in total.
