To a mixing bowl add 300 gms chicken along with 2 tablespoon cornflour, 2 tablespoon maida, salt to taste, 1/2 teaspoon pepper powder, 1 teaspoon ginger garlic paste and 1 egg.
Mix it well to form a marinade to coat the chicken.
Heat oil in a kadai - add the chicken in small batches.
Add in small batches depends on the size of the kadai too. Do not disturb for few seconds.
Flip over after few seconds and fry.
Fry until golden brown.
Drain and remove it. Repeat to finish other batches too.
All fried and ready. Set it aside.
Heat 1 tablespoon oil - add 2 small red chillies, 1 teaspoon ginger, 1 teaspoon spring onion green, 1 tablespoon garlic, 1.5 tablespoon onion.
Saute for a minute in medium high flame.
Now add 1/2 teaspoon soya sauce, 1/2 teaspoon sugar, 1/2 teaspoon pepper powder, salt to taste, 1/2 teaspoon vinegar, 1 and 1/2 tablespoon schezwan sauce, 1 tablespoon tomato sauce.
Give a quick mix.
Add 1/4 cup water give a quick mix.
Add fried chicken.
Give a quick mix.
If you like it more saucey then garnish with spring onion and switch off at this stage. But I like to reduce the sauce a bit so cooking for few more mins in medium flame.
Finally garnish with 1 tablespoon spring onion and switch off.
Schezwan Chicken is ready to serve!
