Carrot Raita

Carrot Raita is a tasty & crunchy side dish made by blending carrot with curd & seasoning it with spice powder. Carrot Raita is healthy & cooling side for rice meal & spicy food that could be made in minutes. Carrot Raita Recipe is explained in this post with step by step pictures.

Ingredients

  • 1 cup chilled curd / yogurt
  • 3/4 cup carrot grated
  • 1 tablespoon coriander leaves finely chopped
  • 1/4 teaspoon chat masala powder optional
  • salt to taste

To Temper :

  • 1.5 teaspoon oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • 1/2 teaspoon jeera
  • 1 green chillies chopped
  • a small pinch hing

Instructions

  • Rinse carrots, peel off the skin and grate them using a grater, Set aside.
  • Heat oil in a tempering pan – add the items listed under ‘to temper’ let is crackle, Set aside.
  • Beat well along with required salt.
  • Then add carrot, tempering along with chat masala powder. Give a quick mix.
  • Garnish with coriander leaves.
  • Serve Carrot Raita chilled along with parathas / any variety rice of your choice.

Notes

  • I used jeera for tempering so used chat masala powder. But you can replace chat masala powder with roasted jeera powder.
  • You can even use 1:1 ratio for curd : carrots or as per you wish.
  • Make sure to beat the curd well before mixing.
  • You can even saute the carrots for a while and then add but I prefer raw carrots.
