Potato Chutney

Potato Chutney is a delicious side dish for meals & chapathi made by cooking the potatoes with tomato puree and spices. Potato chutney is easy to cook and a nice alternative from the regular chutneys. How to make Potato Chutney is explained in this recipe with step by step pictures for your reference.

Ingredients

  • 1 big potato chopped into bite sized pieces
  • 1 big onion finely chopped
  • 1 teaspoon red chilli powder
  • 1/2 cup water
  • salt to taste

To grind:

  • 1 big onion chopped roughly
  • 2 tomatoes roughly chopped
  • 4 garlic cloves
  • 2 red chillies

To temper:

  • 1/2 tablespoon cooking oil
  • 1/2 tablespoon gingelly oil
  • 1/2 teaspoon mustard seeds
  • a small sprig curry leaves
  • a tiny pinch hing

Instructions

  • In a mixer add the ingredients listed under ‘to grind’ and grind it to a fine paste, set aside.
  • Heat oil in a a kadai – add onion and fry till transparent.
  • Then add onion tomato paste and let it boil for few mins until raw smell of tomatoes leave.
  • Then add potatoes.
  • Add 1/2 cup water, Cover and cook for few mins until potatoes turn slightly soft yet crunchy enough to bite.
  • Let it cook for 3more mins.Add required salt.
  • Meanwhile heat a tadka pan – add the ingredients listed under ‘to temper’ let it splutter then add it to the chutney
  • Serve Potato Chutney with chapathi / idli / dosa

Notes

  • Don’t overcook potatoes, it shouldn’t be mushy that's the specialty of this chutney.
  • You can even add 1/2 teaspoon sambar powder for extra flavor.
  • If you do not prefer gingelly oil, then add 1 tablespoon cooking oil itself.
  • This is mildly spicy, adjust red chillies according to your taste.
