Trim the edges, peel off the skin. Grate carrot finely.
Grate cabbage - thin shreds as shown below.
To a mixer jar : add all the ingredients listed under 'to grind'.
Grind it coarsely without adding any water. Set aside.
To a kadai heat coconut oil - add items listed under 'to temper' including mustard seeds, curry leaves and red chilli.Let it splutter.
Once it splutters add carrot,cabbage.
Add salt and turmeric powder to it.
Saute for 2-3 mins.
Add 1/2 cup water to it.
Cook covered for 5-7 mins.
Cook until the veggies turn transparent and slightly soft.
Once veggies are cooked, add coconut mixture.
Mix well.Keep sauteing and cook until raw smell leaves. Cook atleast for 5 mins.
Once raw smell leaves mix well and switch off.
Cabbage carrot thoran is ready.
