Sheer Khurma | Sheer Korma

Sheer Khurma is a rich pudding from the Mughalai Cuisine, it is also called as Sheer Korma. Sheer Khurma is a rich creamy kheer or pudding made using vermicelli, milk, sugar, dry fruits and nuts. Let's learn to make Sheer Khurma Recipe with easy step by step pictures and video.

Ingredients

  • 2 cups full fat milk
  • 1/2 cup fine vermicelli (loosely packed)
  • 1/2 cup condensed milk If adding sugar add 1/3 cup sugar
  • 1/4 teaspoon rose / kewra essence
  • 1/4 teaspoon cardamom powder
  • 5 strands saffron
  • 2 teaspoon ghee

Nuts and Dry fruits:

  • 1 tablespoon cashews
  • 1 tablespoon almonds
  • 1/2 tablespoon raisins
  • 1 tablespoon dates
  • 1 tablespoon pista

Instructions

  • Heat 2 teaspoon ghee in a pan add all the nuts and dry fruits fry until golden -1 tablespoon each of cashews, almonds, pistachios, dates and 1/2 tablespoon raisins. Remove and set aside.
  • In the same pan add 1/2 cup vermicelli and roast it.
  • Roast until golden.
  • Set aside to cool in a plate.
  • To a pan add 2 cups full fat milk, let it boil then simmer for 5 mins.
  • Then add fried dry fruits and nuts (reserve a tablespoon for garnish) and roasted vermicelli.
  • Mix well and cook. As its fine vermicelli gets cooked in just 2 mins so keep an eye.
  • Now add 1/2 cup condensed milk. If you want to replace condensed milk with sugar then add 1/3 cup sugar.
  • Add 5 strands saffron and 1/4 teaspoon cardamom powder.
  • Add 1/4 teaspoon rose essence. Mix it well.
  • Let it simmer for few mins until slightly thick and creamy.
  • Switch off and serve! Sheer Khurma ready!

Notes

  • The kheer thickens with time so switch it off accordingly.
  • Add chiroli nuts if you have it.
    You can skip condensed milk and add 1/3 cup sugar too.
  • Ghee and malai should float on top at the final stage when you switch off.But don't make it too thick as after cooling it may be become very thick.
  • If it gets thick after cooling add 1/2 cup boiled milk but it will reduce the creaminess.
