Peanut Rice Recipe

Peanut Rice is a spiced, nutty rice made using peanuts, herbs, spices and rice. Peanut Rice is relished by people who wish to experiment varieties in food. It is called Groundnut Rice or Verkadalai Sadam. Learn to make Peanut Rice with step by step pictures.

Ingredients

To roast:

  • ¼ cup peanuts
  • 1 teaspoon urad dal
  • 1 tablespoon sesame seeds
  • 2 red chilies
  • 2 tablespoon coconut

To temper:

  • 2 teaspoon peanut oil
  • ½ teaspoon mustard seeds
  • few curry leaves
  • 1-2 tablespoon peanuts

Instructions

  • First add all other ingredients except coconut and roast till peanuts turn slightly golden then add coconut and roast till nut turn golden brown and coconut is dry.
  • No need to brown the coconut. Cool down the mixture completely then transfer to mixer jar. Grind to a slightly coarse mixture.
  • Heat oil in a kadai - add the items listed under 'to temper' let it splutter. Now to a mixing bowl add rice, peanut mixture and tempering along with required salt. Mix well.
  • Peanut rice is ready!

Notes

  • You can make the spice powder a day ahead and just mix it the next day to pack for lunch.
  • While grinding just pulse and grind else the spice powder will become sticky.
    Adding a teaspoon of oil while mixing rice keeps the rice moist.
  • If you do not have peanut oil replace it with gingelly oil or normal cooking oil.
