Panjiri | Panjiri Recipe

Panjiri is a traditional, Punjabi sweet made by roasting whole wheat flour, nuts, dry fruits, phool makhana separately in ghee and mixing it together with sugar. Panjiri is a Janmashtami special sweet offered to Lord Krishna and can be relished as an anytime snack. Learn to make Panjiri recipe with step by step pictures and video.

Ingredients

  • 1 cup wheat flour
  • ½ cup makhana
  • 1 +2 tablespoon ghee
  • 1 tablespoon cashew roughly chopped
  • 1 tablespoon badam roughly chopped
  • 1 tablespoon pista roughly chopped
  • 1 tablespoon raisin
  • ½ cup cane sugar

Instructions

  • Heat 1 tablespoon ghee in a kadai - add 1 tablespoon cashews,1 tablespoon almonds, 1 tablespoon pistachios.
  • Fry until crisp and golden. Remove and set aside.
  • Now add 1 tablespoon raisins.and fry until it bubbles up and is golden. Transfer to a bowl and set aside.
  • Add ½ cup makhana and roast it until crisp and golden.
  • Break and see to check if its crisp.Transfer to a bowl and set aside.
  • Now add remaining 2 tablespoon ghee to the kadai.
  • Now add 1 cup wheat flour.
  • Roast without any lumps, even if it forms break it and roast the flour.
  • Roast until its golden and nice aroma comes.
  • See the color and texture change in the picture below.
  • You can see the difference in color and texture. Switch off and set aside to cool.
  • Switch off and remove from fire.
  • This is all done off the flame. When it is still warm, add ½ cup cane sugar.
  • Add roasted nuts, dry fruits and makhana.
  • Mix well.
  • Panjiri is ready!

Notes

You can add powdered white sugar too but cane sugar tastes best.
You can keep in room temperature for about 2-3 days and enjoy.
Though adding makhana is purely your choice, I would recommend adding it as it gives such a nice crunch and taste to this dish.
You can use white sugar or brown sugar too.
You can serve panjiri as such or with warm milk.
