Ingredients

For Pesto Sauce

  • 2 cups fresh basil leaves tightly packed
  • 1/3 cup parmesan cheese
  • 1/3 cup olive oil
  • 1/3 cup pine nuts
  • 1/2 teaspoon pepper powder
  • 1/2 lemon
  • salt to taste

For Pesto Sandwich

  • 4 bread slices white or brown
  • 4 tablespoon pesto sauce
  • 2 tablespoon onion sliced
  • 2 tablespoon bell pepper sliced
  • 4 tablespoon cheese
  • 1/2 teaspoon mixed herbs
  • butter as needed to toast

Instructions

  • Toast 1/3 cup pine nuts until golden and set aside to cool. Toasting nuts brings out the nutty flavor.
  • To a food processor or blender add toasted pine nuts along with 2 cloves garlic.
  • Clean and rinse 2 cups basil leaves well. Drain water completely. Add the basil leaves along with salt to taste.
  • Add 1/2 teaspoon pepper powder.
  • Add 1/3 cup Parmesan cheese.
  • Add lemon juice from 1/2 lemon.
  • Blend it and add olive little by little while blending. Use 1/3 cup olive oil add it in 3-4 parts.
  • Blend it until coarse not too smooth.
  • The consistency is slightly coarse. Fresh Basil Pesto Sauce is ready!
  • Apply butter on both the sides of a bread slice. Repeat it for another slice and set aside.
  • Add 2 tablespoon pesto sauce along with 1 tablespoon onion, 1 tablespoon bell pepper.
  • Add 2 tablespoon cheese along with a sprinkle of 1/4 teaspoon mixed herbs.
  • Seal with another bread slice.
  • Place the prepared sandwich on the skillet.
  • Press the sandwich with a flat base bowl or plate. This step ensures even sealing.
  • Flip over to other side. Toast until golden brown on both the sides.
  • Place it on a wooden board.
  • Cut and serve hot!

  • Pressing with a bowl or plate with flat base ensures sealing the sandwich intact.
  • You can even use store bought pesto sauce.
  • You can even add cooked or roasted chicken along with pesto sauce.
  • Make sure to butter the inside so that the sandwich does not get soggy. The buttered surface will keep the pesto sauce intact without making the bread soggy.
  • You can even add crumbled paneer or scrambled eggs as filling for this sandwich.
  • Add colored bell pepper for a more colorful sandwich.
  • Add cooked beans for a more wholesome and filling sandwich.
