Yam fry recipe

Senaikizhangu varuval, yam fry with freshly ground spice mixture.

To roast and grind:
  • 1 tbsp coriander seeds
  • 1 tsp fennel seeds
  • 2 cloves garlic
  • 2 small dried red chillies
To temper:
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • a small sprig of curry leaves
  1. Dry roast the ingredients listed under ' to roast and grind' until browned and aroma comes.Transfer to mixer jar.

  2. Grind to a coarse mixture,Set aside.Cut yam into bite sized squares and wash well to get rid of the mud smell. 

  3. Then cook it along with turmeric powder until soft yet crunchy enough to bite.

  4. Now add the spice mixture along with garam masala powder and marinate,keep aside for 15mins.Heat oil in a pan - add the items listed under 'to temper' let it splutter.

  5. Add marinated yam and roast until golden brown.Add salt if needed. It will take atleast 10mins in low flame o get roasted well.Switch off.
