Pesto Sauce | Cilantro Almond Pesto Pasta

Pesto sauce is wonderful, mild, aromatic sauce made by grinding cilantro (coriander leaves) with almond & garlic. Pesto sauce is then added with cooked pasta to provide a wholesome great meal. This is my award winning recipe which featured in BBC Good Food Magazine. How to make Pesto sauce and Cilantro Almond Pesto Pasta is explained in this recipe with step by step pictures.

Ingredients

  • 3/4 cup fusilli pasta
  • 1/2 cup cilantro / coriander leaves packed
  • 15 almonds / badam
  • 3 pearls garlic halved
  • 1 green chillies chopped
  • 1/2 teaspoon olive oil
  • salt to taste

Instructions

  • Soak almonds in hot water for 5m
  • ins, then peel off the skin and keep aside.
  • Cook pasta with enough water(till immersing level) along with oil and salt.
  • Drain water and set aside.
  • In a pan, dry roast garlic and green chillies – switch off, cool down and grind it along with cilantro and almonds.
  • Grind it to a semi coarse paste.
  • Sprinkle little water to make it like chutney consistency.
  • Transfer the cilantro almond pesto to cooked pasta , add salt and mix well until the pesto is coated well with the pesto.
  • Enjoy Pesto Sauce Pasta!

Notes

  • You can use the pesto for any type of pasta.
  • The pesto can be made in advance and stored(refrigerated). It keeps well for 3 days.
  • Adding oil while cooking pasta always helps to avoid sticking.
