Ingredients

  • 1 and 1/4 cups broken corn
  • 1/2 cup coconut grated
  • 1 tablespoon sugar
  • salt to taste
  • 1/3 to 1/2 cup water (rough measures adjust accordingly)
  • oil to grease

Instructions

  • To a mixing bowl - add broken corn. Mine was fine so I didn't powder it, if its coarse then pulse it few times. Add salt to it.
  • Add sugar to it.Mix well.
  • Add water little by little till it resembles wet coarse crumb texture. If you hold the mixture with your palms.
  • It should hold together like this and when you slightly break it should fall apart this is the right consistency for a soft puttu. Take your puttu maker, grease it with oil.
  • Add a thin layer of coconut then add corn mixture.
  • Alternate with coconut and corn mixture layers and finish off, let the starting and ending be with coconut layers. Close with lid. Attach with pressure cooker and steam cook for 15-20 mins.
  • Carefully push it from other side, cut and serve.
  • Serve Broken Corn Puttu hot with sugar and banana the best combo!

Notes

  • If the broken corn you use is very coarse then pulse it few times in mixie then use it for puttu.
