Chicken Fried Rice

Chicken Fried Rice is a delicious, flavourful fried rice made by cooking rice with chicken pieces, eggs, veggies and spices. Chicken Fried Rice makes the family fall for its taste & asks for a repeat. Chicken Fried Rice Recipe presented here is an inspiration from Chinese cuisine made to suit the taste buds of India.

Ingredients

  • 1 cup basmati rice
  • 2 cups water for cooking rice
  • 1/4 kg chicken
  • 2 nos eggs
  • 2 tsp ginger garlic paste
  • 1 tbsp spring onions white part
  • 1 tbsp spring onions green part
  • 1/4 cup big onion chopped finely
  • 1 tbsp garlic crushed
  • 1/2 cup capsicum chopped finely
  • 1/4 tsp soya sauce
  • 1 and 1/2 tsp pepper powder
  • 3 tbsp olive oil / cooking oil
  • salt to taste

Instructions

  • Rinse rice, Soak rice for 15 mins. Pressure cook it with required water for 3 whistles till rice grain is separated.
  • Add a tsp of olive oil, Fluff it off with a fork, keep aside.
  • In a pressure cooker add chicken along with salt and ginger garlic paste. Saute and cook for 2 mins.
  • Add required water and pressure cook 3 to 4 whistles. Remove the chicken pieces, you can use the stock for making soup or gravy.
  • Shred the chicken pieces, discard the bone. Now get ready with the chopping of all other ingredients.
  • Heat oil in a pan - add spring onion white part along with garlic. Saute for  a minute.
  • Then add onion cook till it turns transparent. Add chopped capsicum cook for few mins until it shrinks.
  • Then add shredded chicken and saute for a second then add soya sauce.
  • Add vinegar and pepper powder. Cook in high flame for a minute.
  • Lower the flame and cook for few more mins until it all comes together. Bring the mixture to the side of the pan and crack open 2 eggs on other half side of the pan.
  • Add required salt. If you want you can taste check it and add more pepper powder if you want at this stage. Add spring onion green part.
  • Toss it well. Finally add cooked rice, toss it well and cook for another 3mins and switch off.

Notes

  • Soaking and cooking helps in grain separated and soft rice.
  • I usually use 1cup:1.5cup ratio for rice : water.
