Quinoa Inipu Pongal

Ingredients

  • 1/2 cup quinoa
  • 1 and 1/4 cups water
  • 1/4 cup moong dal
  • 1 tablespoon cashews broken
  • 10 nos raisins
  • 2 tablespoon ghee
  • a tiny pinch cardamom powder

For the jaggery syrup:

  • 1/2 cup jaggery
  • 1/4 cup water

Instructions

  • Measure jaggery and add it in a pan, add water and dissolve it well.
  • Heat it up for 2mins just for the jaggery to get dissolved.Strain to remove impurities.
  • Dry roast moong dal until golden,rinse it once and set aside.Soak quinoa in water for 20 mins.
  • Rinse it well and drain.Now pressure cook quinoa and dal together with enough water for 5 whistles.I kept them inside a container and pressure cooked.
  • Once pressure releases by itself mush it up with a laddle.Set aside.Now heat the jaggery syrup until slightly thick then add mashed up quinoa and dal.Cook until it is well combined.
  • Keep cooking for 2mins then add a tablespoon of ghee.
  • In a tadka pan heat another tablespoon ghee, fry cashews until golden then add raisins fry until it is plumpy.Add the tadka to the pongal.
  • Add cardamom powder and mix well.Switch off and serve hot!

Notes

  • I did not use milk, but if you like you can add milk for extra creaminess and richness.
  • Quinoa should be cooked soft so soaking atleast for 15 mins is a must.
