Murungai Keerai Uttapam

Murungai Keerai Uttapam is a tasty crepe made by topping up murungai keerai over the batter after spreading it on pan in the regular making of uttapam. Murungai Keerai Uttapam is a healthy twist to the uttapam that even kids who do not like greens will like it.

Instructions

  • Pluck the drumstick leaves from the stem and set aside.
  • If the leaves are tender then the tiny stems can be added too. Rinse it well twice and drain water. Set aside.
  • Heat dosa tawa. Add 2 ladles of idli dosa batter and do not spread. It should be thick.
  • Sprinkle a generous handful of drumstick leaves on it. Drizzle oil or ghee.
  • Now slide the uttapam to the side of the tawa, spread ghee on the dosa tawa, now flip the uttapam so that leaves part touches the dosa tawa where we have drizzled ghee, simmer.This is for nicely roasting the leaves so that it becomes slightly crisp.
  • Press and let it cook for few seconds, do not let it brown. Flip and now the uttapam is ready to serve.
