Sweet corn sundal recipe

Ingredients

  • 1 cup sweet corn kernels
  • 2 tbsp coconut grated

To temper:

  • 1/2 tsp mustard seeds
  • 1/2 tsp split urad dal
  • a small sprig curry leaves
  • 2 nos red chillies

Instructions

  • Rinse the kernels, transfer to pressure cooker along with salt and water(till immersing level).Pressure cook for 4-5 whistles or until soft.Heat oil in a pan - add mustard seeds and urad dal.
  • Let it splutter and wait till the dal turn golden then add curry leaves and red chillies.Now add cooked corn if there is little water add it along with the corn.
  • Toss it well.Cook covered for 2 mins for the moisture to leave.Now open and toss it again.If needed add salt.
  • Now add coconut and cook for 2 mins and switch off.

Notes

  • Do not add more water while cooking corn.Alternately you can steam cook it too.
  • You can even add a tsp of sundal podi or idli podi.
