Sweet Corn Sundal

Sweet Corn Sundal is a modern day sweet & salt snack made by cooking sweet corn with tempered coconut & spices. Sweet corn sundal is an easy and tasty snack that is commonly made for Navaratri festival and as healthy tea time snack. Sweet Corn Sundal recipe is described in this post with step by step pictures.

Ingredients

  • 1 cup sweet corn kernels
  • 2 tablespoon coconut grated

To temper:

  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon split urad dal
  • a small sprig curry leaves
  • 2 nos red chillies

Instructions

  • Rinse the kernels, transfer to pressure cooker along with salt and water(till immersing level). Pressure cook for 4-5 whistles or until soft.
  • Heat oil in a pan - add mustard seeds and urad dal.
  • Let it splutter and wait till the dal turn golden then add curry leaves and red chillies. Now add cooked corn if there is little water add it along with the corn.
  • Toss it well. Cook covered for 2 mins for the moisture to leave. Now open and toss it again. If needed add salt.
  • Now add coconut and cook for 2 mins and switch off. Sweet Corn Sundal ready!

Notes

  • Do not add more water while cooking corn.Alternately you can steam cook it too.
  • You can even add a teaspoon of sundal podi or idli podi.
  • You can use regular corn too make sure to cook until soft.
  • You can steam cook corn too.
