Carrot yogurt popsicles recipe with honey

Ingredients

  • 1 cup thick curd
  • 1/4 cup milk (boiled and cooled)
  • 2 small sized carrot
  • 1 tbsp honey
  • 1/4 tsp vanilla essence

Instructions

  • Take curd,whisk it well.I used my hand blender.Add honey.
  • Then add milk,vanilla essence,whisk it.Peel the skin form carrots,trim the edges then pressure cook it for 2-3 whistles or until soft.
  • Puree it and set aside.take your favourite popsicle mould.
  • First add yogurt mixture then add 2 spoons of carrot mixture, alternate it.
  • Fill it up till you reach the rim.Cover with aluminium foil and freeze for 2 hours, then insert icecream sticks.You can alternatively close with the popsicle lid too.Freeze overnight or atleast for 6-8 hours.Remove the foil, show the bottom part in running tap water and then remove the popsicles carefully.Serve immediately!

Notes

  • This is not too sweet its very mild, if you want add more honey or any sweetner of your choice.I havent added any sweetner to the carrot puree,
    if you prefer you can add it.
  • If you don't have popsicle mould, you can use disposable cups or just steel tumblers too.
