Ingredients

  • 20 nos long beans
  • 2 tablespoon coconut pieces
  • 6 nos small onion chopped finely
  • a generous pinch of turmeric powder
  • 1/2 teaspoon red chilli powder
  • water to cook
  • salt to taste

To temper:

  • 2 teaspoon coconut oil
  • a small sprig curry leaves
  • 1 no long green chilli slitted
  • 4 nos garlic crushed

Instructions

  • Trim the edges of long beans. Cut into 1 inch long pieces. Rinse it in water.
  • Rinse it well, drain water and keep aside.
  • In a kadai or pan heat coconut oil - add crushed garlic, add curry leaves and green chilli. Saute for a minute.
  • Then add chopped onion and saute for 2mins then add coconut pieces. Saute for few mins.
  • Now add long beans along with turmeric powder, salt and red chilli powder. Saute well.
  • Now add little water and cook covered.
  • Cook until the beans becomes soft, give a quick stir and switch off. Serve Achinga Payar Mezhukkupuratti for lunch meal!
