Pudina Pulao | Mint Rice

Pudina Pulao is a tasty, aromatic mild spicy pulao version made by grinding pudina, tempering it with spice and then cooking it with rice. Pudina Pulao is enjoyed with raita and a good choice to make it on Saturdays or on holidays as a surprise meal which the family will ask for a repeat. How to make Pudina Pulao is explained in this post with step by step pictures.

Ingredients

  • 1 cup rice I used basmati rice
  • 1 big onion chopped lengthwise
  • 1 potato
  • 3 teaspoon ginger garlic paste
  • 2 cloves
  • 1 pod cardamom
  • 1/2 inch piece cinnamon
  • 1 tablespoon ghee
  • salt to taste

To grind to smooth paste

  • 1 bunch mint / pudina leaves 1/2 cup mint leaves approx~
  • 2 tablespoon coconut
  • 1/2 tomato
  • 1 green chilli

Instructions

  • Soak the rice in water for 30mins. Drain rice and keep aside.
  • Grind the pudina leaves with the coconut, green chillies and tomatoes to a fine paste.
  • Heat ghee in a pressure cooker, add cardamom, cloves and cinamom, and saute for about a minute.
  • Then add the ginger garlic paste fry for 2mins next add chopped onions and saute until the onions turn light brown.
  • Add the ground paste to the pan and fry till raw smell of tomatos and puthina goes off.
  • Now add potato, required salt and basmati rice and mix well with the masalas and fry for 2-3 mins.
  • Add 1.5 cups of water to the above mixture and pressure cook it for 8-9mins.
  • When the pressure releases gently turn over taking care not to break the rice. You can garnish with ghee fried cashews. Enjoy Pudina Pulao!

Notes

  • I usually use 1:1.5 cups as rice : water ratio when rice is soaked for 30mins.
