Coconut Ice

Coconut Ice is a simple quick dessert made using just 3 main ingredients. Coconut Ice is deliciously sweet and very easy to make. Coconut Ice Recipe with step by step pictures and video.

Ingredients

  • 2 cups dessicated coconut
  • 1/2 cup powdered sugar
  • 3/4 cup condensed milk
  • 1/2 teaspoon rose essence optional
  • 1 teaspoon beetroot juice

Instructions

  • To being with first add dessicated coconut and icing sugar.
  • Mix this well first.
  • Add condensed milk to it.
  • Add rose essence to it. However this is optional if you prefer you can leave it as such or add vanilla essence.
  • After that, mix well to form a sticky dough.
  • Divide it into 2 halves. Keep one half in a seperate bowl.
  • To another half add beetroot juice for pink color.You can even add pink food color if you want.
  • Mix well so that the pink color is even. Coconut ice will be more appealing when the color is uniform.
  • Lay butter paper on a square tin or tray. Now both the white and pink mixtures are ready.
  • Then add white mixture to it. Spread and press it tight as shown below.
  • After that add pink layer, spread it and press tight. However it will stick together when set in fridge but still press tight.
  • Refrigerate for 1-2 hrs.
  • Later, after an hr or so remove from refrigerator.
  • Carefully remove coconut ice bar from the container.
  • Finally cut the coconut ice bar into small squares.
  • Enjoy the coconut ice!

Notes

  • You can reduce or increase powdered sugar as per taste.
  • The dessicated coconut I used was a bit coarse but I recommend using the fine variety to get sharp cuts.
    You can even run it in mixie to make it fine.
  • You can either use food color or beetroot juice like I've used.
  • Instead of rose essence you can add vanilla essence too.
