Jelly Custard

Jelly Custard is a silky smooth dessert made by layering jelly & custard mix and refrigerating it. Jelly Custard is kid’s favorite dish and a nice choice to make for kids birthday parties.

Ingredients

For jelly:

  • 1 and 1/2 cups + 1/2 cup water
  • 1/2 cup sugar
  • 2 tablespoon rose syrup
  • few drops red food color
  • 5 gms agar agar china grass

For custard:

  • 1 cup full cream milk
  • 1 tablespoon vanilla custard powder
  • 2 tablespoon sugar
  • 1/2 cup jelly

Instructions

  • Take 1 and 1/2 cups of water in a mixing bowl. Add rose syrup and pink food color. Mix well.
  • Now add sugar, whisk it well until sugar completely dissolves, Set aside. In another bowl, cut agar agar into small bits.
  • Rinse it once then add 1/2 cup and let it to boil. Boil until you see the strands completely dissolved.
  • Strain to the bowl containing rose water mixture. Mix it well with whisk.
  • Pour it in the tray/bowl where you want to set the jelly. Leave it undisturbed for 30mins. No need to keep in fridge it will set well in room temperature itself.
  • Boil milk (reserve a tablespoon of milk) for 5mins until its bubbles up nicely. Simmer and then add sugar. Mix well.
  • To a tablespoon of milk add custard powder, mix well to form a runny paste without any lumps. Add this to simmering milk.
  • Keep cooking, slowly it will get thick.
  • Cook in low flame and keep mixing so that there are no lumps. At one stage the custard will nicely form a thick coating, it will coat the laddle like this, it should be thick as shown below. At this stage, switch off and cool down completely.
  • First spoon the custard as first layer. I didnt want set jelly as I have tried it here so instead scooped out and added it to the glass on top.Serve chilled!

Notes

  • I made jelly in bulk for using for other few recipes too so ended up using just 1/2 cup for this.
  • You can even make readymade set jellies for this.
