Heat 1 tbsp ghee in a pan - add cashews fry until golden, remove and set aside.
Add sooji to the same pan fry until aromatic(low flame) for 3 mins.Remove nand set aside.
Heat water in a pan let it boil simmer then add sroasted sooji in a sprinkled manner.
Keep stirring to avoid lumps.Once its cooked and becomes thick add vanilla sugar and vanilla essence.
mix well, the moisture will become goey.Add remaining ghee little by little, mix well until a mass comes together without sticking much.
Cook covered for 2 mins, mix well add fried cashews give a quick mix and switch off.
Do not add sugar before sooji gets cooked.
