Aloo Makhana

Aloo Makhana is a healthy crispy & soft snack made by sautéing cubed potatoes with makhana & spices. Aloo Makhana is a generally made during vrat / fasting days as it is no onion, no garlic recipe and filling too! Aloo Makhana is a healthy snack for evening tea time compared to the packed foods.

Ingredients

  • 1/2 cup boiled potatoes
  • 1 cup makhana
  • 1/2 teaspoon ghee
  • rock salt to taste
  • 1 teaspoon mint leaves finely chopped
  • 1 teaspoon coriander leaves finely chopped

To temper:

  • 1 teaspoon oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon green chilli finely chopped

Instructions

  • Heat ghee, add makhana and roast till its golden and crisp. Break to check if its crispy. Set aside.
  • Heat oil - add jeera, green chillies let it splutter then add boiled potatoes along with chilli, anarthana and roasted jeera powder and salt. Mix well and roast for a minute.
  • Now add roasted makhana and give a toss. Add mint and coriander leaves mix well and switch off.
  • Serve Aloo Makhana hot or  warm!
