Quinoa Cookies

Quinoa Cookies are crunchy outside and soft inside cookies made by baking a blend of cooked quinoa, wheat flour, eggs, sugar, butter and choco chips. Quinoa Cookies does not add as much calories as the regular flour cookies, hence a delight for people on diet & diabetes.

Ingredients

Instructions

  • To a mixing bowl add wheat flour, then cooked quinoa (cool it completely) along with baking powder and salt.
  • Whisk well for even mixing and set aside.
  • Add an egg to another mixing bowl. Add sugar to it.
  • Add butter and vanilla essence to it. Whisk well.
  • Now add quinoa flour mixture to it and mix with a spatula.
  • Add choco chips and fold in. Do not overmix.
  • I used my 1 tablespoon spoon to measure even sized cookies. Scoop out using a small spoon and place it on a butter paper. Slightly flatten it.
  • Meanwhile preheat the oven at 180 Deg C for 10 mins.
  • Bake in preheated oven at 180 deg C for 12-15 mins until the cookies are golden.
  • Cool down completely then store or enjoy Quinoa Cookies! I loved the warm fresh out of the cookies so enjoyed a few :) and tats the main benefit of homemade goodies soo fresh and warm!

Notes

  • These cookies are not too sweet if you want you can increase sugar to 1/4 cup. But as choco chips is there 1/8 cup sugar was just right for us and no one complained too. Incase if you prefer your cookies to be more sweeter then increase sugar.
