Quinoa Casserole

Quinoa Casserole is a cheesy, gooey dish made by cooking quinoa, veggies, spices & sauces and baking it after topping it with cheese. Quinoa Casserole is a tasty & healthy alternate to the white flour ingredient casserole ideal for tasting regular cuisines without adding much of calories.

Ingredients

  • 1/4 cup quinoa
  • 1/4 cup onion finely chopped
  • 1/2 cup carrot grated
  • 2 tablespoon capsicum finely chopped
  • 1/4 cup cooked corn
  • 1/4 cup grated cheese
  • 2 tablespoon breadcrumbs
  • 2 to 3 tablespoon pizza sauce
  • 1/3 teaspoon mixed herbs
  • 1/4 teaspoon pepper powder
  • salt to taste

Instructions

  • Measure and take quinoa in a bowl, rinse it well. Drain.
  • Add 1/2 teaspoon oil in a sauce pan, add drained quinoa and toast for a minute.
  • Then add 1 cup water and start cooking. Simmer the flame and cook covered for 15-20 mins.
  • You will see a small tail coming out and quinoa should have absorbed all the water. After 20 mins switch off and set aside for 10 mins. Then open and fluff it up.
  • Heat oil in a pan - add onion sauté till transparent, add carrot sauté for 2 mins.
  • Then add capsicum give a quick sauté then add boiled corn.
  • Mix well then add required salt, pizza or pasta sauce, mixed herbs and pepper powder. Mix well and cook for 2 mins and switch off.
  • Add cooked quinoa to it. Mix well.
  • Add breadcrumbs to it. Mix well.
  • Grease a baking tray with butter and add quinoa to it.
  • Pat the top well, add shredded cheese preferably mozarella. I had no stock so went ahead with cube cheese and that's the reason why it didn't spread if anyone out there is wondering ;)
  • Bake in preheated oven at 180 deg C for 10 mins grill for the last 2 mins along for a crusty top. Remove the tray from oven and enjoy Quinoa Casserole!

Notes

  • You can sprinkle bread crumbs on top before baking too.
