Measure and take quinoa in a bowl, rinse it well. Drain.
Add 1/2 teaspoon oil in a sauce pan, add drained quinoa and toast for a minute.
Then add 1 cup water and start cooking. Simmer the flame and cook covered for 15-20 mins.
You will see a small tail coming out and quinoa should have absorbed all the water. After 20 mins switch off and set aside for 10 mins. Then open and fluff it up.
Heat oil in a pan - add onion sauté till transparent, add carrot sauté for 2 mins.
Then add capsicum give a quick sauté then add boiled corn.
Mix well then add required salt, pizza or pasta sauce, mixed herbs and pepper powder. Mix well and cook for 2 mins and switch off.
Add cooked quinoa to it. Mix well.
Add breadcrumbs to it. Mix well.
Grease a baking tray with butter and add quinoa to it.
Pat the top well, add shredded cheese preferably mozarella. I had no stock so went ahead with cube cheese and that's the reason why it didn't spread if anyone out there is wondering ;)
Bake in preheated oven at 180 deg C for 10 mins grill for the last 2 mins along for a crusty top. Remove the tray from oven and enjoy Quinoa Casserole!
