Quinoa Adai

Quinoa Adai is a tasty, savoury pancake like crepe made by grinding quinoa with varieties of dal, spices & veggies and cooked like uttapam. Quinoa Adai is a good choice of tiffin for people on diet & diabetes and relished with chutney & powdered jaggery.

Ingredients

To grind:

  • 1/2 cup quinoa
  • 1/8 cup toor dal
  • 1/8 cup green gram dal
  • 1/4 cup chana dal
  • 1 tablespoon moong dal
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon pepper corns
  • 4 nos small red chillies

Others:

  • 1/4 cup small onion chopped finely
  • 1 tablespoon garlic chopped finely
  • 1 tablespoon coriander leaves chopped finely
  • oil as needed
  • water as needed as needed

Instructions

  • To a mixing bowl measure and add all the ingredients under 'to grind'. Add water and soak at least for 3-4 hrs.
  • Rinse well, drain water and transfer to mixer jar. Add fennel seeds, red chillies and pepper corns along with required salt.
  • Grind it to a slightly coarse paste, rinse the jar and add the water, transfer to a mixing bowl. Add chopped onion, garlic and coriander leaves.
  • Mix well, add water and adjust consistency . It should be more like idli batter in consistency.
  • Heat dosa tawa, pour 2 ladles of batter to the dosa tawa, slightly spread it to make a thick adai. Drizzle oil over the edges, when the edges turn golden flip over and cook other side.
  • Serve Quinoa Adai hot with coconut chutney and cane sugar!

Notes

  • You can make a thin batter like dosa batter, spread it slightly thin and make like dosas too.
  • Do not grind it too smooth and paste like, it should be slightly coarse for great taste.
