Lemon Chia Cake

Lemon Chia Cake is a tasty, spongy cake made by baking a blend of flour, lemon, chia seeds, eggs & butter in bundt mould. Lemon Chia Cake is flavourful anytime snack that is healthy compared to the packed junk foods. Lemon Chia Cake is a must try at home for the joy of baking & tasting!

Ingredients

  • 1 cup whole wheat flour
  • 1 tablespoon chia seeds
  • 1/8 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Others:

  • 4 tablespoon unsalted butter
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup curd
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest

Instructions

  • Preheat oven at 180 deg C.
  • To a mixing bowl - add flour, baking powder, baking soda and salt. Add chia seeds to it. Mix well and set aside.
  • To another mixing bowl add sugar and butter. Whisk well until creamy.
  • Now take 1 egg which is at room temperature. Add the egg and whisk well.
  • Now add the flour mix little by little alternating with curd. Add flour whisk then add little curd.
  • Repeat this until both flour and curd is emptied. Finally add lemon juice and  lemon zest.
  • Mix well. Take a pan (I guess its 4 inch) grease with butter, sprinkle flour dust the extras and get it ready. Transfer the batter into the pan.
  • Bake in preheated oven at 180 deg C for 35-40 mins or until the top turns golden and crusty. You can insert a toothpick and check if its done, it it sticks then bake for few more mins.
  • Cool down completely then slice and serve Lemon Chia Cake!

Notes

  • The cake is mild sweet, if you want increase sugar. As I used brown sugar it was a bit mild sweet only. It is perfect with tea.
  • If you want you can make lemon glaze like here.
