Ingredients

Dry mix:

  • 1 and 1/2 cups wheat flour
  • 1/2 cup sugar
  • 1 tablespoon black poppy seeds
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon baking soda

Wet mix:

  • 4 tablespoon melted butter
  • 1 no egg
  • 1/4 teaspoon salt
  • 3/4 cup yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Preheat oven at 190 deg C for 10 mins.
  • Take a mixing bowl - add wheat flour, baking powder, baking soda and salt. Add sugar to it.
  • Add black poppy seeds, mix well and set aside.
  • In another mixing bowl - add an egg whisk until pale. Add curd.
  • Add lemon juice. Whisk once.
  • Add melted butter, mix it. Add flour mixture.
  • Add lemon zest. Mix with a spatula.
  • Using an ice cream scooper scoop out the batter.
  • Arrange muffin liners in muffin mould. Drop the scooped batter into the liners, sprinkle sugar on top.
  • Bake in preheated oven at 190 deg C for 25-30 mins or until the top turns golden and crusty.
  • Serve Lemon Poppy Seed Muffins warm!

Notes

  • Do not skip the sugar sprinkles as topping.
