Curd Quinoa

Curd Quinoa is a comforting meal made by blending curd, tempered spices and carrot with cooked quinoa. Curd Quinoa is a part of healthy, dietary meal which could be made in minutes.

Ingredients

To cook quinoa:

  • 1/2 cup quinoa
  • 1 cup water

Other ingredients:

  • 3/4 cup thick curd
  • 1/4 cup milk
  • salt to taste
  • 1/4 cup grated carrot

To temper:

  • 1 teaspoon ghee
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon split urad dal
  • 1 no green chilli finely chopped
  • 1 teaspoon ginger finely chopped
  • 1 sprig curry leaves
  • 5 nos broken cashews

Instructions

Cooking Quinoa:

  • Measure and take quinoa in a bowl, rinse it well. Drain.
  • Add 1/2 teaspoon oil in a sauce pan, add drained quinoa and toast for a minute. Then add 1 cup water and start cooking. Simmer the flame and cook covered for 15-20 mins.
  • You will see a small tail coming out and quinoa should have absorbed all the water. After 20 mins switch off and set aside for 10 mins. Then open and fluff it up. Set aside to cool for sometime.

Making Curd Quinoa:

  • Add a teaspoon of ghee fry broken cashews until golden, remove and set aside.
  • Now add the tempering items and let it crackle. Set aside.
  • Now take cooked quinoa in a mixing bowl, add curd and milk to it. Mix well.
  • Then add grated carrot. Add fried cashews, tempering and chopped coriander leaves.
  • Add required salt and mix well. Serve!

Notes

  • You can add chopped cucumber or add any fruits as topping.
