Lemon Quinoa

Lemon Quinoa is a tangy, flavourful meal made by cooking quinoa and tempering it with spices & lemon extract. Lemon Quinoa is Westernized version of Lemon Rice – very healthy & easy to make.

Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1 teaspoon oil
  • 1/4 teaspoon turmeric powder
  • 1/2 lemon
  • a tiny pinch hing
  • salt to taste

To temper:

  • 2 teaspoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 tablespoon chana dal
  • 1 red chilli
  • 10 nos curry leaves
  • 1 teaspoon ginger chopped

Instructions

Cooking Quinoa:

  • Measure and take quinoa in a bowl, rinse it well. Drain.
  • Add 1/2 teaspoon oil in a sauce pan, add drained quinoa and toast for a minute.
  • Then add 1 cup water and start cooking. Simmer the flame and cook covered for 15-20 mins.
  • You will see a small tail coming out and quinoa should have absorbed all the water. After 20 mins switch off and set aside for 10 mins. Then open and fluff it up.

Making Lemon Quinoa:

  • Soak chana dal for 15 mins, drain and set aside.
  • Heat oil in a pan - add mustard seeds, red chillies and curry leaves. Let it crackle. Fry for few seconds.
  • Then add chana dal fry until golden, then add salt, hing and turmeric powder sauté for 2 mins then switch off. Set aside to cool down.
  • Then add lemon juice and quinoa, toss it well. Enjoy Lemon Quinoa!

Notes

  • I didn't add salt while cooking quinoa, if you want you can add it.
  • If you like garlic then add 2 finely chopped garlic along with tempering items.
