Coconut Quinoa

Coconut Quinoa is a flaky, tasty dish made by tempering cooked quinoa with grated coconut & spices. Coconut Quinoa can be relished as a tiffin or lunch meal and very healthy too!

Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1/2 teaspoon oil
  • 1/4 cup coconut grated
  • salt to taste

To temper:

  • 2 teaspoon coconut oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • 2 small red chillies
  • 1 tablespoon cashews broken
  • 10 nos curry leaves

Instructions

Cooking Quinoa:

  • Measure and take quinoa in a bowl, rinse it well. Drain.
  • Add 1/2 teaspoon oil in a sauce pan, add drained quinoa and toast for a minute. Then add 1 cup water and start cooking. Simmer the flame and cook covered for 15-20 mins.
  • You will see a small tail coming out and quinoa should have absorbed all the water. After 20 mins switch off and set aside for 10mins.Then open and fluff it up.

Making Coconut Quinoa:

  • Heat coconut oil in a pan - add mustard seeds, urad dal, red chillies. Let it crackle then add cashews fry until slightly golden.
  • Then add curry leaves, sauté for a minute then add coconut and cook for 2-3mins.
  • Add required salt. Finally add cooked quinoa and toss well. Enjoy Coconut Quinoa!

Notes

  • I didn't add salt while cooking quinoa, if you want you can add it.
