Lemon Poppy Seed Cookie

Lemon Poppy Seed Cookie is a flavourful, crispy cookie made by flat rolling a dough made of wheat flour & poppy seed, cutting it with cookie cutter & baking it. Lemon Poppy Seed Cookie is zesty, sweet & sour cookie that makes evening tea time special and healthy too!

Ingredients

  • 1 cup whole wheat flour
  • 1/4 cup powdered sugar
  • 2 tablespoon poppy seeds
  • 2 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 4 tablespoon oil
  • a pinch salt
  • ice water as needed

Instructions

  • Measure and add wheat flour to a mixing bowl. Add baking powder and salt.
  • Add black poppy seeds. Whisk it and set aside.
  • In another mixing bowl add oil, powdered sugar.
  • Add lemon juice. Whisk it.
  • Now add lemon zest. Mix it. Then add flour mixture.
  • Mix with your finger tips, now add chilled water little by little to form a dough.
  • Cling wrap and chill it for at least 30 mins.
  • Roll out the dough to 1/4inch thickness and cut out cookies using your favorite cookie cutter.
  • Meanwhile preheat oven at 180 deg C for 10 mins.
  • Collect the extras again roll out. Repeat to finish.
  • Arrange in a baking tray with butter paper laid.
  • Bake in preheated oven at 180 deg C for 10-12 mins or until the edges start to turn golden. Enjoy Lemon Poppy Seed Cookies!
