Aval Sundal

Aval Sundal is a tasty, flaky sundal made by stir frying aval with rajma & tempered spices. Aval Sundal is a good choice for evening snack with tea and for Navarathri.

Ingredients

  • 1 cup red aval / poha
  • 1/2 cup rajma
  • 3 tablespoon grated coconut
  • salt to taste

To temper:

  • 2 teaspoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • a small sprig of curry leaves
  • 2 small red chillies

Instructions

  • Soak rajma overnight, drain water, rinse it well then pressure cook for 5 whistles or until soft. Drain water and set the rajma aside.
  • Take poha in a mixing bow, add water and soak for 5mins, rinse the poha well and drain water. Set aside.
  • Heat oil in a pan - add the items listed under 'to temper' let it splutter. Add cooked rajma toss it.
  • Add poha and cook for 3mins. Add salt and toss well.
  • Add coconut, mix it and cook for 2mins and switch off.

Notes

  • The number of whistles depends on the variety of rajma.
  • You can use any type of bean variety you like.
  • You can even use white poha.
