Aval Halwa | Poha Halwa

Poha Halwa is a delicious, buttery sweet made by simmering poha / aval in ghee with sugar to Halwa consistency& garnished with nuts. Poha Halwa is a good choice of sweet to make at home during Krishna Jayanthi & special occasions. Poha Halwa is simple &quick to make compared to the regular making of Halwa.

Ingredients

  • 1/2 cup poha / aval I used red aval
  • 1/4 cup ghee
  • 1/4 cup + 1 tablespoon sugar
  • 1/2 cup milk
  • 6 nos cashews broken
  • a tiny pinch cardamom powder
  • 2 drops orange food color optional

Instructions

  • Soak poha for 5mins in water. Rinse it well and drain water.
  • Heat 2 teaspoon of ghee, fry cashews until golden, remove it and set aside.
  •  In the same add poha and sauté for 2mins.Then add milk and let it boil.
  • Mash the poha well with a masher. Add sugar and orange food color.
  • Add ghee little by little. Keep cooking in low flame and add ghee when it sticks.
  • Add remaining ghee and keep cooking.
  • It will start to leave out ghee at the edges and will start to roll and start leaving the sides of the pan, at this stage stage add fried cashews, cardamom powder mix well and switch off. Enjoy Poha Halwa warm!

Notes

  • You may not need the ghee fully so add little by little and stop adding when ghee oozes out at the edges. I have 1 tablespoon left.
  • You can even powder poha and add. But in that case you need to rinse it well then sun dry it and only then grind it else it will form a lump while grinding. It will take at least 3-4 hours to dry completely.
  • I used red aval because I had it in hand, you can use white aval too.
  • If you don't want to add food color just skip it or you can use natural food colors available in markets now.
