Kulukki Sarbath Recipe

Kulukki Sarbath is a sweet, spicy and refreshing drink – very unique in taste made by heavily shaking a blend of lemon juice, green chilies, basil seeds, sugar syrup and ice cubes. Ingredients

  • 1 cup chilled water
  • 1/2 teaspoon basil seeds
  • few lemon slices
  • 1 lemon
  • 1 small long green chilli slitted
  • salt to taste
  • few ice cubes

For the sugar syrup

  • 1 cup sugar
  • 1 cup sugar syrup

Instructions

  • Add 1 cup water to a sauce pan along with 1 cup sugar and let it to boil. I am making in bulk to store this simple syrup in fridge.
  • Mix it well until sugar dissolves completely.
  • Boil for 3-5 minutes and switch off. No consistency needs to be checked.
  • Strain to remove impurities if any.
  • Measure 1/4 cup sugar syrup and set it aside.
  • Slice the lemon and keep it ready.
  • Slit a green chili in the center and set it aside. Do not cut into 2 pieces, it should have a slit that is enough.
  • Add 1/2 teaspoon basil seeds to a bowl add 1/3 cup water to it.
  • Set aside until it blooms, takes just 5-7 minutes to bloom. Set this aside.
  • Get all your ingredients ready. You need a shaker with lid.
  • First add 1/4 cup prepared sugar syrup to the bottle.
  • Add a lemon slice and green chilli.
  • Squeeze lemon juice from 1 lemon.
  • Add 2 tablespoon bloomed basil seeds.
  • Add a pinch of salt.
  • Add few ice cubes.
  • Add 1 cup water. Add little more if you find the sweetness more.
  • Close with lid.
  • Shake, shake shake it rigorously.
  • Pour into serving glass, add more ice cubes and serve chilled.

Notes

Use a tall container with lid which doesn't leak because we need to shake it rigorously. You can use a coffee shaker too.
Adjust sweetness according to taste.
