Quinoa Chocolate Pudding

Ingredients

  • 1/4 cup quinoa
  • 1/2 cup water
  • 1 cup + 1 tablespoon milk
  • 1/8 cup cane sugar
  • 1 heaped tablespoon coco powder
  • 1 teaspoon custard powder vanilla flavour
  • 2 teaspoon sprinklers
  • 2-3 teaspoon chocolate sauce

Instructions

  • Measure quinoa, rinse it in water at least twice then soak in water for at least 15mins.
  • Drain water and set the quinoa aside.
  • Boil water, add drained quinoa.
  • Cook covered for 10mins or until all the water is absorbed and quinoa is cooked.
  • Now add milk and let it cook for few mins. Add cane sugar.
  • Add coco powder and custard powder, add a tablespoon of milk to it. Mix well so that the mixture is smooth without any lumps.
  • By the time quinoa must have nicely blended with milk, but should be runny not too thick, this is the right stage. Add coco powder mixture to it.
  • Mix well and let it to cook until it turns to a pudding consistency, slightly thick and it will coat the ladle. Switch off.
  • Let it cool down for few mins, then spoon the mixture into the serving bowls and chill it.
  • At the serving time, drizzle chocolate sauce, sprinkle the color sugar sprinklers and enjoy Quinoa Chocolate Pudding!

Notes

  • You can even add any fruits and nuts of your choice.
  • Use good quality coco powder for a great flavour.
  • Instead of cooking quinoa in water, you can even cook it in milk (same ratio 1 cup quinoa : 2 cups milk/water)
  • You can replace cane sugar with normal white sugar too.
