Sweet Corn Sandwich

Sweet Corn Sandwich is a yummy, mild spicy sandwich made by blending mayonnaise with spiced & sautéed sweet corn, onions & capsicum and stuffing it in bread (toasted or untoasted). Sweet Corn Sandwich is a great breakfast and lunch box idea that is relished by the kids. How to make Sweet Corn Sandwich is explained in this post with step by step pictures.

Ingredients

  • 4 slices bread
  • 2 tablespoon mayonnaise
  • 1/4 cup sweet corn
  • 4 tablespoon big onion chopped roughly
  • 1 tablespoon capsicum chopped roughly
  • 1 teaspoon pasta / pizza sauce / schezwan sauce
  • 1/4 teaspoon mixed herbs
  • salt to taste

Instructions

  • Pressure sweet corn until soft, Set aside.
  • In a pan heat oil add onions sauté till transparent then add capsicum.
  • Now add cooked corn along with mixed herbs and pasta sauce. Mix well and cook for a minute.
  • Add required salt. Mix well and switch off.
  • Transfer this to a mixing bowl, let it cool down for a while then add mayo and mix well. Now the stuffing is ready.
  • Take your bread slices, spread a generous spoon of the sweet mayo mixture on one side of the bread then close with other bread and press it with your palms to seal it. Cut diagonally and enjoy!
  • You can toast / grill Sweet Corn Sandwich if you want & enjoy!

Notes

  • You can grill or toast the sandwich too.
  • Do not over toast onion capsicum, it should retain its crunch.
  • I used schezwan sauce so it was super spicy which went well with mayo.
