Heat 2 teaspoon oil in a pan - when it is heated add 1/2 teaspoon cumin seeds let it splutter.
Add 1/4 cup onion, 2 tablespoon tomato and 1/2 teaspoon ginger garlic paste.
Saute until it shrinks and tomatoes turn mushy.
Now add 1/4 cup vegetables I added carrot and frozen peas. Add 1/4 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1/4 teaspoon coriander powder and 1/2 teaspoon garam masala powder along with required salt.
Give a quick saute. Saute for 2 mins.
Add 2 and 1/2 cups water, give a quick mix .
Let it come to a boil.
Cook covered until the veggies are cooked soft.
Now add 1/2 cup oats after checking the vegetables(if they are cooked soft).
Give a quick mix.
Let it cook for a minute.
Starts to boil, keep cooking.
Turns thick more like porridge consistency.
It should be flowing and sticky. Switch off at this stage as it may turn thick after cooling down.
Finally garnish with 1 tablespoon coriander leaves.
Give a quick mix and enjoy it hot!
Serve masala oats hot!
