Chilli Parotta

Chilli Parotta is a spicy, delicious dish made by roasting parotta and then cooking it with tempered spices, onion & tomatoes. Chilli Parotta is a fast food enjoyed by families at restaurant and would love making it at home if the recipe method is known. Here we go with the recipe of Chilli Parotta hotel style with step by step pictures.

Ingredients

  • 1 tablespoon oil + 2 teaspoon oil
  • 2 nos parottas large sized around 10 inch
  • 1/2 cup onion cubed
  • 1/2 cup green capsicum cubed
  • 1 teaspoon chilli powder
  • 1/4 teaspoon pepper powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon soya sauce
  • 1 teaspoon green chilli sauce
  • 2 tablespoon tomato sauce
  • 1 tablespoon garlic finely chopped
  • 1/2 teaspoon ginger finely chopped
  • 1 teaspoon green chillies finely chopped
  • salt to taste
  • 2 tablespoon water
  • 1 teaspoon coriander leaves chopped

Instructions

  • Take 2 cooked parottas. Cut vertically.
  • Then cut horizontally to get small squares like shown. Separate it and set aside.
  • To a pan heat 2 teaspoon oil add cut parotta pieces.
  • Fry for 2 mins until slightly crispy. Remove and set aside.
  • Heat 1 tablespoon oil - add 1 tablespoon garlic, 1/2 teaspoon ginger and 1 teaspoon green chillies all finely chopped. Saute until golden.
  • Add 1/2 cup onion, 1/2 cup capsicum cubed. Give a quick saute.
  • Then add 1 teaspoon red chilli powder, 1/2 teaspoon garam masala powder and 1/4 teaspoon pepper powder.
  • Add 1/2 teaspoon soya sauce and 1 teaspoon green chilli sauce.
  • Add 2 tablespoon tomato sauce.
  • Give a quick mix. Be quick do not burn the masalas.
  • Now add 2 tablespoon water. Give a quick mix and cook until it turns slightly thick.
  • Add fried parottas. Give a quick toss, add 1 teaspoon coriander leaves or spring onion.
  • Mix well and switch off. Enjoy Chilli Parotta!

Notes

  • If you want you can skip coriander leaves and add spring onions instead.
  • You can add chopped spring onions along with onion while sauteing and then use few for garnishing too.
  • Make sure the masala paste should be less else the parotta will become very soggy.
  • You can a pinch of pepper powder.
  • While serving add a teaspoon of lemon juice.
  • Use kashmiri red chilli powder for the bright red color as in restaurants.
  • You can deep fry the parotta pieces too.
  • You can use frozen parottas or readymade half cooked parottas, cook them in dosa tawa then chop them into squares.
