Rinse potatoes well, peel off the skin. Slice them first. I used 4 medium sized potatoes.
Cut into long strips like this. Repeat to finish.
Keep it immersed in water until use.
Boil 3 cups water, when it starts to boil add salt to taste along with drained potatoes. Cook for around 3-5 minutes.
Strain and remove the potatoes. Spread it on a plate and set aside to cool.
To a mixing bowl add 1/4 cup rice flour, 1/4 cup cornflour along with salt to taste, 1/4 teaspoon pepper powder. Add little water.
Mix well to form a slightly thick batter like this.
Add few potato pieces and coat with the batter. Add in batches and coat with batter.
Add to preheated oil and fry until golden brown. While frying if it sticks, gently break it else you can break it after frying also. Repeat to finish.
Heat 1 tablespoon oil add 1 tablespoon garlic, 1 teaspoon ginger and 1 long green chilli. Saute until golden.
Add 1/2 cup onion and 1/2 cup capsicum.
Give a quick saute in medium high flame. Then add 1 teaspoon soya sauce, 1.5 teaspoon chilli sauce, 2 to 3 tablespoon tomato sauce, salt to taste and 1/2 teaspoon pepper powder. Finally add 1 teaspoon cornflour mixed with 2 tablespoon water.
Give a quick mix then add 1/4 cup water to it.
Give a quick mix and let it boil for a minute.
Add fried potatoes.
Give a quick toss until the sauce coats the potatoes well. Finally add 1 tablespoon spring onion, 1 teaspoon vinegar, give a quick mix and switch off.
Serve hot!
