Ingredients

  • 4 medium sized potatoes small

For the batter

For the sauce

  • 1 tablespoon oil
  • 1 tablespoon garlic finely chopped
  • 1 teaspoon ginger finely chopped
  • 1 long green chili sliced thin
  • 1/2 cup big onion sliced thin
  • 1/2 cup capsicum sliced thin
  • 1 tablespoon spring onions white part
  • 1 teaspoon soya sauce
  • 2 to 3 tablespoon tomato sauce
  • 1 teaspoon chilli sauce / schezwan sauce
  • 1/2 teaspoon pepper powder
  • 1 teaspoon cornflour mixed with 2 tablespoon water
  • 1 teaspoon vinegar optional
  • 1 tablespoon spring onions green part
  • salt to taste

Honey Chilli Potato

  • 2 tablespoon honey
  • 2 tablespoon sesame seeds

Instructions

Chilli Potato

  • Rinse potatoes well, peel off the skin. Slice them first. I used 4 medium sized potatoes.
  • Cut into long strips like this. Repeat to finish.
  • Keep it immersed in water until use.
  • Boil 3 cups water, when it starts to boil add salt to taste along with drained potatoes. Cook for around 3-5 minutes.
  • Strain and remove the potatoes. Spread it on a plate and set aside to cool.
  • To a mixing bowl add 1/4 cup rice flour, 1/4 cup cornflour along with salt to taste, 1/4 teaspoon pepper powder. Add little water.
  • Mix well to form a slightly thick batter like this.
  • Add few potato pieces and coat with the batter. Add in batches and coat with batter.
  • Add to preheated oil and fry until golden brown. While frying if it sticks, gently break it else you can break it after frying also. Repeat to finish.
  • Heat 1 tablespoon oil add 1 tablespoon garlic, 1 teaspoon ginger and 1 long green chilli. Saute until golden.
  • Add 1/2 cup onion and 1/2 cup capsicum.
  • Give a quick saute in medium high flame. Then add 1 teaspoon soya sauce, 1.5 teaspoon chilli sauce, 2 to 3 tablespoon tomato sauce, salt to taste and 1/2 teaspoon pepper powder. Finally add 1 teaspoon cornflour mixed with 2 tablespoon water.
  • Give a quick mix then add 1/4 cup water to it.
  • Give a quick mix and let it boil for a minute.
  • Add fried potatoes.
  • Give a quick toss until the sauce coats the potatoes well. Finally add 1 tablespoon spring onion, 1 teaspoon vinegar, give a quick mix and switch off.
  • Serve hot!

Honey Chilli Potato

  • After the final step of coating the sauce with fried potatoes switch off the stove then 2 tablespoon honey along with 2 tablespoon toasted sesame seeds.
  • Give a quick mix and your honey chilli potato is ready to serve!

Notes

  • Don’t skip green chillies, I fine chopped it so that it doesn’t come in mouth while eating.
  • Don’t add more water while mixing with potatoes, just sprinkle little water to get a binding.
  • I pan fried potatoes but alternatively you can deep fry them too.
  • This is medium spicy, adjust schezwan sauce according to your spice level preference,
  • Adding onions is purely optional, you can skip that too.
  • I used homemade schezwan sauce.
  • The consistency is purely your choice, you can make it saucy like how I have did or make it dry too.
  • Always serve hot as it may turn soggy when resting time is given.
  • Adding cornflour water mixture is purely optional – this is just to make the sauce thick.
  • Don’t add more soya sauce than the mentioned amount else it will change the taste and make the manchurian more darker in color.
