Ingredients

  • 3 cups cooked basmati rice
  • 1 cup boiled sweet corn
  • 2 tablespoon oil
  • 1 tablespoon garlic finely chopped
  • 1/2 cup onion
  • 1.2 cup capsicum
  • 2 green chillies slit
  • 1 teaspoon soya sauce
  • 3/4 teaspoon pepper powder
  • 3/4 teaspoon crushed pepper
  • 1/2 teaspoon sugar
  • salt to taste

Instructions

  • Cook rice Spread it over a plate to cool down. Set aside.
  • To a wok heat 2 tablespoon olive oil 0 add 1 tablespoon garlic finely chopped along 2 slit green chilies.
  • Saute for a minute until garlic starts to turn golden.
  • Add 1/2 cup onion, 1/2 cup capsicum along with required salt.
  • Saute in medium flame for a minute.
  • Add 1 teaspoon soya sauce along with 3/4 teaspoon pepper powder, 1/2 teaspoon sugar.
  • Give a quick saute.
  • Add 1 cup cooked sweet corn.
  • Give a quick saute.
  • Add 3 cups cooked basmati rice.
  • Add 3/4 teaspoon crushed pepper.
  • Give a quick mix.
  • Toss the corn rice in high flame for about a minute and switch off.
  • Enjoy corn rice hot!

Notes

  • You can even add spring onions too.
  • Olive oil gives a nice flavor to this dish.
  • You can also add 2 tablespoon carrot while sauteing the veggies.
  • Use freshly ground pepper for a great flavor.
  • Sauteing the veggies in medium / high flame gives a nice smoky flavor and also retains its crunchiness without the raw smell.
  • I soaked basmati rice for 30 mins then pressure cooked for 1:2 ratio(rice:water) for 3 whistles in medium low flame.
  • Make sure to fluff the rice and spread it with little olive oil to make the grains separate.Allow it to rest at least for 30 mins before adding.
