To begin with soak tutti frutti and raisins in hot water. Set aside.
Next to prepare spice mix : take cinnamon, cloves, cardamom and nutmeg.
Grind it as fine as possible. I used my hand mortar and pestle to do the job. Slightly coarse is ok as we are anyway going to sieve it along with flour. Set it aside.
Next to a a sieve : add flour, baking soda and spice mix. Sieve it well.
After that mix it well with a whisk and set aside. Flour mix ready.
Next to another mixing bowl add sugar, salt, vinegar.
Add freshly squeezed orange juice. You can use packed juice also however using fresh orange gives a good taste. Hence I recommend using fresh orange juice. The taste of the fruit cake muffins depends on the fruit we add.
Add melted butter to it. After that whisk it well.
Now add flour together with cashews and almonds chopped.
Mix to from a batter. Do not overmix gently fold in otherwise muffins will become hard.
Consequently, the batter will be thick. Fruit cake muffin flavor....Hmm....
Scoop out the batter using a icecream scooper.
After that line muffin liners to a muffin tray. Add the batter to it until 3/4th.
I got 6 medium sized fruit cake muffins.Preheat oven at 175 deg C for 10 mins.
Finally bake in preheated oven at 175 deg C for 20-25 mins or until a tooth pick inserted in center comes out clean.
