Panjiri
Panjiri is a traditional, Punjabi sweet snack made by blending roasted wheat flour, nuts, makhana and sugar. Panjiri is a Janmashtami special sweet offered to Lord Krishna and can be relished as an anytime snack. Panjiri is mild & healthy sweet compared to the packed foods.

1 cup wheat flour 1/2 cup makhana 1+2 tablespoon ghee 1 tablespoon cashew roughly chopped 1 tablespoon badam roughly chopped 1 tablespoon pista roughly chopped 1 tablespoon raisin 1/2 cup cane sugar You can even add 1/4 cup desiccated coconut(roast and add)
Heat 1 tablespoon ghee in a kadai- add all the 3 nuts, fry until crisp and golden, remove and set aside.
Now add raisins and fry until it bubbles up and is golden. Transfer to a bowl and set aside.
Add makhana and roast it until crisp and golden. Break and see to check if its crisp. Transfer to a bowl and set aside.
Now add remaining 2 tablespoon ghee to the kadai. Now add wheat flour and roast without any lumps, even if it forms break it and roast the flour.
Roast until its golden and nice aroma comes. See the color and texture change in the tile pic. Switch off and set aside to cool.
When its still warm, add cane sugar and roasted ingredients. Mix well.
Store Panjiri in a clean dry airtight container.
You can add powdered normal white sugar itself but cane sugar tastes best.
You can keep in room temperature for about a week and enjoy.
