Ingredients

  • 1 cup flour
  • 1/4 cup coco powder
  • 1 teaspoon baking powder
  • 1/4 ts baking soda
  • a pinch teaspoon salt
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/8 cup butter
  • 1/8 cup oil
  • 1/2 teaspoon vanilla extract
  • 2 teaspoon choco chips(just for topping)

Instructions

  • Preheat oven at 220 deg C for 10 mins.To a mixing bowl add wheat flour,coco powder,baking soda,salt and baking powder.
  • Whisk well for even mixing.In another mixing bowl add sugar and egg.
  • Whisk until pale yellow.Add butter and buttermilk.
  • Whisk until combined the add vanilla essence.Finally add flour mixture.
  • Whisk well.The batter is thickish and scoopable.
  • Scoop the batter and fill in muffin liners.My muffin cups were huge so got 5 large muffins and 1 medum sized muffins.Bake in preheated oven at 220 deg C for 15-20 mins.
  • Cool down then store.You can have a taste when its warm, tastes so delicious.

Notes

  • You can add 1/2 cup choco chips for a more rich moist muffins as per the orginal recipe.
  • I wanted to make a simple healthier version so topped with choco chips.
  • You can replace white sugar with cane sugar too, mine was out of stock so went ahead with what I had in hand.
