Quinoa Kesari

Quinoa Kesari is a tasty sweet made by simmering quinoa with sugar, flavours and garnished with nuts. Quinoa Kesari is healthy compared to the regular kesari in terms of adding lesser calories and good fibre content. Quinoa Kesari is a delight sweet for people on diet & diabetics.

Ingredients

  • 1/2 cup quinoa
  • 1 and 1/2 cups water
  • 1/3 cup cane sugar
  • 5 nos cashews broken
  • 3 teaspoon ghee

Instructions

  • Measure quinoa and transfer to a bowl. Add water to it and soak for 20 mins. Rinse it well and drain water from it, set aside.
  • Heat ghee in a pan. Once it melts add cashews and roast until golden, transfer to a separate bowl and set aside.
  • Now add drained quinoa and roast for few mins. Add water and let it boil.
  • Cook covered until it becomes soft. Fluff it up, add saffron and cook for 2 mins then add cane sugar.
  • Cook until sugar melts and is combined well.
  • Add ghee and fried cashews, give a quick mix and switch off.
  • Serve Quinoa Kesari hot!

Notes

  • If you like the texture a bit mushy then cook for some more time with 1/4 cup extra water. We like the nutty crunch of quinoa so cooked it this way.
  • Add more ghee if you prefer
