How to cook Kerala Matta Rice

Matta rice or red rice is highly nutritious because of its outer bran and at the time because of the bran it takes lots of time to get cooked when compared to our regular white rice.When cooked,the natural red color in the bran or hull of the rice, leaches out and dyes the rest of the rice from red to light shade.

Draining Method

Take 1 cup rice, rinse it well with water twice atleast then drain water.Now again pour water till immersing level and soak rice for atleast 1 hour.

Draining method : I used a small pot.Fill little more than half of the pot, I measured it was about 12 cups of water.Let it boil rigorously.Add the rice.Let it cook, it will take atleast 20 mins.Cook in low medium flame and do not add more water, it should half of the pot or little more and the rice should be fully immersed too.So choose a pot accordingly.

After the rice is cooked, if you press the rice should be mash able not too mushy.Now drain the excess water.I usually pour the floating water manually then slant it to remove the excess water.I used a plate with holes and place it a slant position so that the excess water drains away.Let it in this position for atleast 20mins.

Pressure Cook Method

Follow same steps as soak in draining method. Pressure cooker method : Drain water from soaked rice(pre soaking is needed).Now add rice and water directly in the pressure cooker.Close and pressure cook for 10 whistles in low medium flame, then simmer for 10 mins(do not worry about the whistles).Switch off and do not open or disturb it for 15mins. Allow the pressure to release by itself, the resting time is important.

Open and fluff it up.If you have little water floating either you can keep it on the stove and cook for few more mins or drain it.There was no need for me to do it.Serve with any curry of your choice. Enjoy !
